On a Hot Day Like This… and a Review of French Onion Chicken

On hot days like this, my ideal summer nights are dinners at home with a DVD, a tub of ice cream and air conditioning. But I don’t have to settle for take-out or deal with the steamy grocery store parking lots! You might want to take advantage of stocking up your freezer as well.

Either way, staying home for dinners is easy with us. Speaking of how easy it is, my 9 year old son made us a French Onion Chicken last night.

Sean and his best friend came to the store for a visit, and they decided to throw on some aprons and tried out the contest winner French Onion Chicken. It is amazing how simple and how delicious this recipe is. Texture is important to me – the French onions provided the salty, crunchiness I like. The marinade made the all natural chicken breasts tender and juicy. No wonder it is a winner!
