Old Fashioned Meatloaf

Yesterday was the first day of track practice for my son.  We value sports very much because playing sports help kids build character, learn about sportsmanship, achieve physical health, explore new potential hobbies, and spend non-screen time with their friends. 

But boy!  The time-consuming logistics that come with kids’ playing sports!  If you are like me, the Spring calendar is already packed with sports practices and games. Kids are hungry all the time and you are stuck with driving them from one place to another. Sitting in the car, waiting, thinking all the to-dos on your list.  While you wait idly, you realize there is no time to chop and cook before kids cry “HUNGRY!”  and that it is another take-out night.  Next thing you know, half of the health benefits from playing sports is down the drain along with the fried chicken that your kids wash down with a super-sized coke!

It doesn’t need to be that way!  A savvy mom would have healthy snacks and water bottles in the gym bag, and she would have Dream Dinners ready to go in the refrigerator.  She would call dad to stick the pan in the oven and set the table before she and the kids get home.

The dish I had for such an occassion last night was Old Fashioned Meatloaf with Twice Baked Potatoes.  It was hearty, fufilling, and cook in 30 minuites.  There was virtually no prep work involved.  Oven and pans, that’s it.  See for yourself – only two days left to get this kid-friendly entree before we move on to March, an action packed sports season coming up!
